What's on your table this week?

I sure hope you had a wonderful Easter celebration!

If you are like me, you have some ham to use in your menus this week.

Let's start with one of my favorites - Ham and Potatoes Au Gratin. AllRecipes.com has a simple recipe but it does take a little time. If you don't have time in the evening for the casserole to cook, use your crock pot. Remember to reduce the amount of milk by half if you are using your crock pot.

Eggs Bennedict is a very rich and elegant way to use your leftovers! This recipe is from BedandBreakfast.com and is delicious. If you are short on time, you can substitute a Hollandaise sauce mix with the 'made from scratch' version in this recipe.

Nothing is quite as satisfying as soup on a chilly night. Ham and Potato Soup fits the bill here. Even though it is Spring, we will have chilly nights to come. This recipe from AllRecipes.com will have you enjoying our soup in 45 minutes - flat.

Salads are always a healthy and quick alternative for dinner. MyRecipes.com has a marvelous Mediterranean Vegetable Salad with Ham that will give your salad a fresh new look and taste.
