MMC 30-Minute Menus for Week of July 27

I hope you are enjoying a wonderful summer! We are back from our family reunion (which was great!).

Since we are smack, dab in the middle of summer the menus this week use simple, no-cook or minimum-cook recipes so we all can enjoy the summer! I plan to spend the evenings on the patio and selected menus that are easily portable from kitchen to patio if you choose to do the same.

I use several cooking methods to speed dinner prep including prepared (not processed) foods. When you have a bit more time, you can always substitute the prepared foods with your made-from-scratch recipes.

Sunday:
Grilled steak with blue cheese topper (combine blue cheese crumbles with Panko bread crumbs and place on top of grilled steaks, broil for 1 minute or until cheese is brown; grill extra steak for Tuesday)
Potato packets (diced potatoes with olive oil and rosemary in foil packets cooked on grill)
Caesar salad (prepared salad dressing)
Pecan bars with whipped cream (cookie dough with pecans baked in pan, prepared whipped cream)

Monday:
Bistro chicken (cut up rotisserie chicken with fresh tomatoes, onions, and mushrooms with mozzarella cheese sprinkled over the top; can be baked or placed in foil packet and grilled)
Pasta of choice
Green beans
Fruit skewers with lemon yogurt dressing (pineapple, banana, kiwi, and strawberry skewers with lemon yogurt, lemon zest, and lemon juice dressing; purchase extra strawberries for Saturday)

Tuesday:
Black and blue salad (steak from Sunday over salad greens with blue cheese and salad fixings of choice, prepared Ranch dressing)
Rolls, butter
Ice cream parfaits (layered ice cream with leftover fruit from Monday and whipped cream from Sunday)

Wednesday:
Kentucky hot browns (layered open faced sandwich; sourdough bread, turkey, ham, bacon with cheese sauce broiled until cheese sauce is browned; deli meats -purchase extra for Friday)
3-bean salad (jarred)
Derby tarts (prepared tart shells, chocolate morsels, pecan pieces, brown sugar, butter, egg)

Thursday:
Pulled pork (crock pot dish using pork tenderloin, jarred mushroom gravy, and bottled BBQ sauce)
Long grain and wild rice (boxed)
Broccoli
Pound cake with apricot sauce (purchased pound cake and apricot preserves)

Friday:
Layered salad (lettuce, boiled egg slices, peas, diced ham, diced tomato/onion , diced turkey, mayo, cheddar cheese, bacon)
Baguette, butter
Rocky road cookies (sliced prepared chocolate cookie dough with mini marshmallows, pecans, and mini chocolate morsels placed on top and baked)

Saturday:
Grilled salmon with dill butter
Grilled ratatouille (potatoe wedges, asparagus, bell peppers, onions)
Citrus salad (grapefruit and orange sections over bed of lettuce with balsamic dressing)
Strawberries with sour cream and brown sugar drizzle
