MMC 30-Minute Menus for Week of July 6

I hope you are enjoying a wonderful summer! We are planning a great 4th of July and I hope you are too!

My menus this week reflect both the summer temperatures outside and a 'down day' Tuesday when my husband is having a 'procedure' done. A little pre-planning is necessary to make sure all the bases are covered!

You will find that I use several cooking methods to speed dinner prep including prepared (not processed) foods. When you have a bit more time, you can always substitute the prepared foods with your made-from-scratch recipes.

Sunday:
Grilled pork tenderloin (marinate in prepared marinade overnight)
Hobo vegetable packets (diced potatoes, baby carrots, pearl onions, canned green beans)
Pineapple salad (sliced pineapple over bed of lettuce with yogurt dip on top)
Brownies (purchased brownies; ice cream with chocolate sauce poured over all is delish!)

Monday:
Shrimp salad in tomato cups (pre-cooked and shelled party shrimp)
Warm rolls, butter
Banana split pudding (pineapple from Sunday, prepared graham cracker crust and frozen whipped topping)

Tuesday:
(Procedure day for hubby)
Chicken and rice soup (crock pot; save remaining chicken for Friday)
Mozzarella cheese sticks (frozen)
Gelato with fruit garnish (purchased gelato)

Wednesday:
Pork pita pockets (cooked pork from Sunday; purchased pita bread, salad dressing, and veggies)
Fruit salad (mixed fruit of choice topped with yogurt dip from Sunday)
Pound cake with jam topping (frozen pound cake and jam of choice)

Thursday:
Broiled flounder
Long grain and wild rice (boxed rice)
Asparagus with lemon butter
Ice cream sandwiches (pound cake from Wednesday; purchased ice cream of choice)

Friday:
BBQ chicken on grill (chicken from Tuesday; purchased BBQ sauce)
Potato salad (canned potatoes)
Slaw (bagged slaw mix with prepared slaw dressing)
Corn on cob
Fruit pizza (prepared sugar cookie dough)

Saturday:
Grilled beef & veggie kebobs (bottled Italian dressing for marinade and basting sauce)
Rice
Salad stuffed tomatoes (bagged salad)
Coconut ice cream (flaked coconut, lemon juice, and rum extract folded into softened purchased ice cream with lemon garnish)
