MMC 30-Minute Menus for August 24

School is starting for many of us so the meals this week are quick and easy - so you can put your energies into getting your children settled in school.

I am using a pre-cooked spiral sliced ham for my Sunday entree and then using it for two other meals. I just love cook once - eat twice (or three times). This is even better because I won't be cooking the ham the first time either! My secret to 'cook once - eat twice' is to make the meals different each time so my family doesn't feel like they are getting leftovers.

You will find that I use several cooking methods to speed dinner prep including prepared foods. When you have a bit more time, you can always substitute the prepared foods with your made-from-scratch recipes.

Sunday:
Spiral Sliced Ham (fully cooked ham baked to warm)
Quattro Fromage (pasta in a 4-cheese mixture of asiago, provolone, fontina,and gruyere and baked)
Peas with Mushrooms
Lemon Pound Cake with Fresh Strawberries (purchased pound cake, save half for Wednesday)

Monday:
Fried Chicken (purchased)
Potato Croquettes (prepared instant mashed potatoes shaped in fingers then rolled in Panko bread crumbs and baked)
Green Beans
Apple Turnovers (Apple pie filling wrapped inside crescent rolls and baked; top with sugar glaze)

Tuesday:
Spaghetti Bolognese (jarred spaghetti sauce)
Lettuce Wedges with Bleu Cheese Dressing (purchased salad dressing)
Chocolate Pie (chocolate cookie pie crust, instant chocolate pudding, frozen whipped topping)

Wednesday:
Ham and Potato Strata (microwaved layered slices of ham, onion, and potatoes with mushroom soup / cheese sauce)
Broccoli, Bell Pepper, and Mushroom Stir-Fry
Toasted Pound Cake Slices with Ice Cream

Thursday:
Grilled Tuna Medallions with Wasabe Sauce
Salad Greens
Hot Rolls
Grilled Pears with Honey Glaze (halved fresh pears with skin left on and spread with a honey, brown sugar, and cinnamon mixture and grilled)

Friday:
Kentucky Hot Browns (layered cooked ham, turkey, and bacon on sourdough bread with cheddar cheese sauce over all and broiled)
3-Bean Salad (jarred salad)
Derby Pie Tarts (chopped pecans, chocolate morsels, egg, and butter in prepared tart shells and baked)

Saturday:
Stuffed Pork Chops (cooked wild grain rice stuffed into pockets cut in side of pork chops and grilled)
7-Layer Salad (can make-ahead and store in fridge)
Berry Topped Cup Cakes (purchased cup cakes with sliced strawberry 'flowers' and blueberry centers on top)
