MMC 30-Minute Menus September 14

Is there a nip in the air where you live? It is still pretty warm here in North Carolina but the hurricanes are cooling things down a bit adding a Fall flavor. I am starting to bring in some of my favorite Fall foods this week. Fall is the best time of year for me so I always seem to rush the season!

Our garden veggies are still producing and the herbs are 'looking good', too! You will see them scattered throughout the week.

Sunday:
Asian Stuffed Steaks (cut pocket in side of steaks, stuff with rice pilaf, and grill)
Rice Pilaf (boxed long grain and wild rice with mushrooms, sliced scallions, and soy sauce)
Sesame Slaw (bagged slaw mix with a tangy Asian-style prepared marinade / sauce and sesame seeds sprinkled on top)
Un-Baked Alaska (line bowl with pound cake, fill with ice cream, and frost with frozen whipped topping; save any remaining pound cake for Saturday)

Monday:
Not-Your-Mamma's Tuna Salad (pan seared tuna steaks on a bed of lettuce with a warm tomato / bell pepper salsa poured over)
Rolls of Choice
Lemon Tarts (instant lemon pudding in graham cracker tart shells with dollop of whipped cream and raspberry garnish; lemon zest adds an extra tartness to the lemon pudding)

Tuesday:
Cincinnati Chili (Cinci-style chili, spaghetti noodles, kidney beans, onions, and cheese served separately as a chili bar so diners can build their own chili to suite individual tastes; make extra chili for Friday)
Assorted Crackers
Citrus / Avocado Salad (chopped jarred citrus and fresh avocado over lettuce with spicy vinaigrette)
Stacked Brownies (layered purchased brownie, ice cream, chocolate sauce, whipped cream, and cherry)

Wednesday:
Roasted Chicken (chicken cooked in crock pot with herbs such as basil, marjoram, or thyme and 1/2 cup water; served off bone with jarred Alfredo sauce and sauted garden veggies; save half of chicken for Saturday; serve chicken Alfredo over hot biscuits)
Fresh Biscuits (packaged biscuit mix)
Tomato / Asparagus Stir Fry (stir fried asparagus, halved cherry tomatoes, and scallions with a soy sauce and chicken broth mixture sprinkled over top)
Pan Seared Apples in Tapioca Sauce over Ice Cream

Thursday:
Eggplant Parmesan with Fresh Tomato Slices (Make eggplant parm as normal except add a layer of fresh tomato slices over the breaded eggplant before adding mozarella and tomato sauce)
Pasta or Spaghetti Squash
Green Beans
Orange Crescents (canned crescent rolls with orange marmelade mixture in center, baked, and glaze drizzled over top)

Friday:
Chili Cups (chili from Tuesday in a biscuit cup; make biscuit cup by molding canned biscuits over back side of muffin tins and baking)
Grilled Cheese Sandwiches (I like to mix and match different cheeses such as Havarti, Gouda, Provolone, or Swiss with Cheddar; pimento cheese is a great alternative)
Rocky Road Cookies (sliced purchased cookie dough with mini-mellows, mini-chocolate morsels, and nuts placed over top and baked)

Saturday:
Chicken Tacos, Burritos, or Tostados (your choice with cooked chicken from Wednesday, shredded cheese and diced tomatoes, onions, and bell pepper; salsa and guacomole are good condiments)
Corn / Black Bean Salad
Heavenly Hash (fresh berries, canned pinapple chunks, nuts, and marishino cherries in whipped cream spooned over sliced purchased pound cake from Sunday; if no pound cake is left from Sunday, spoon Heavenly Hash into parfait glasses and add a cherry on top)
