MMC 30-Minute Menus for February 15

I am trying (really hard) not to get political here but... the economy is in tough shape right now and so is my budget! I have pulled together menus that will help with the budget and are healthy and hardy for this time of year.

We have been having a mix of beautiful, sunny days and very cold weather which is the norm for our part of North Carolina. The menus are quick prep so you can enjoy the beautiful days - be they sun, snow, or both in your part of the world.

Sunday:
Beef Bourguignon (frozen potato and green bean mix with rosemary butter sauce)
Avocado and Romaine Salad
French Bread, Butter
Cherry Vanilla Pie (prepared graham cracker crust, instant vanilla pudding mix, cherry pie filling)

Monday
Corny Chicken (boxed cornbread stuffing mix)
Steamed Zucchini
Gingerbread with Whipped Cream (boxed gingerbread mix)

Tuesday:
Double Bean Tortilla Stack (vegetarian; canned beans, bagged grated cheese)
Condiments and Veggies (jarred salsa)
Spanish Rice (canned tomatoes)
Chocolate Pear Tart (prepared cookie pie crust, jarred chocolate syrup, canned pears; save any remaining pears for Wednesday)

Wednesday:
Pork Curry (frozen peas)
Lo Mein Noodles (packaged noodles)
Pear Salad (canned pears; use pears from Tuesday if available)
Coconut-Pecan Fingers with Strawberries (purchased lady finger sponge cookies, condensed milk)

Thursday:
Shepherd's Pie (canned soup and mixed vegetables, instant mashed potatoes, bagged grated cheese)
Waldorf Salad
Cherry Fluff (canned cherry pie filling and pineapple, condensed milk, frozen whipped topping)

Friday:
Tuscan Pasta (boxed tube pasta, canned beans, bagged grated cheese)
Sliced Tomato Salad
Baguette, Butter
Peach Macaroon Cups (canned peaches, purchased coconut macaroon cookies)

Saturday:
Quick Weeknight Jambalaya (boxed gumbo mix, cleaned and deveined shrimp)
Spinach Strawberry Salad (bagged baby spinach)
Cream Puffs (purchased cream puffs)
