MMC 30-Minute Menus for April 12

Are you ready for Easter? It is here along with Spring. You will find the menus this week fit the changing season with a lighter selection of foods. I have included two vegetarian menus this week to help lighten the waist line and budget. If you prefer, you can add meat to both the Grilled Pizza and Ravioli Mediteranea - but don't feel like you have to because they are delicious as-is!

We have family visiting so I will prepare a family celebration for Easter dinner. It will be a snap to pull together because I am using fully cooked ham for the main course. The appetizer will be the Italian Buffet 'Party in a Bag': wedge of Parmesan cheese; Tuscan olive cheese ball; prosciutto; fruit tray of figs, apricots, melon with asparagus spears; red pepper and Romano bruschetta topping; artichoke pesto; Asiago cheese crackers, and gourmet olives. This will complement the ham nicely. The great part of the whole meal is that I will spend little preparing it and a lot of time visiting with my family!

Sunday (Easter):
Spiral Sliced Ham (fully cooked ham; save some ham for Tuesday)
Quattro Fromage (boxed pasta, shredded cheeses)
Peas with Mushrooms (frozen veggie mix)
Lemon Pound Cake with Fresh Strawberries (purchased pound cake)

Monday
Thai Shrimp (cleaned and deveined shrimp, Thai peanut sauce mix)
Angel Hair Pasta (boxed pasta)
Cuke and Honeydew Salad
Strawberry Shortcakes (sponge cake shells, frozen whipped topping)

Tuesday:
Ham Asparagus Casserole (ham from Sunday; boxed pasta)
Pear Salad (canned pears)
Chocolate Chip Cookies (prepared cookie dough)

Wednesday:
Ravioli Mediteranea (purchased ravioli, jarred pasta sauce, shredded cheese)
Tossed Salad (bottled salad dressing)
Heavenly Angel Food Cake (purchased angel food cake, strawberry jam, whipped topping)

Thursday:
Hot Chicken Salad (cooked chicken if available, jarred chutney, canned pineapple, bagged salad greens)
Sliced Apples with Grapes
Chocolate Nut Toffee (boxed graham cracker crumbs, chocolate morsels)

Friday:
Grilled Pizza (vegetarian; purchased pizza crust, jarred pasta sauce, shredded cheeses)
Lettuce Wedges (jarred salad dressing)
Grilled Pears with Honey Glaze

Saturday:
Chicken Parmesan (boneless, skinless chicken breasts, jarred pasta sauce, sliced cheeses)
Pasta of Choice (boxed pasta)
Zucchini
Caprese Salad (sliced mozzarella)
Fresh Peach Tarts (prepared tart shells, raspberry jam)
