MMC 30-Minute Menus for June 28

Happy 4th of July! I an hosting a Southern Fish Fry just to be a little different than all the BBQ's that will be going on for this wonderful day of celebration. I hope you have a great day however you choose to celebrate.

Sunday:
Pork Medallions with Tarragon Sauce
Buttered Rotinni
Steamed Zucchinni (buy extra zucchini for Friday)
Blueberry Cheesecake Tarts (graham cracker tart shells, instant cheesecake pudding mix, blueberry jam)

Monday:
Dilled Tilapia Bundles (puff pastry)
Asian Stir-Fry (frozen stir-fry veggie mix)
Cranberry-Apple Salad
Tuilles with Ice Cream (purchased ice cream)

Tuesday:
Roast Beef and Vegetables (crock pot; save leftover beef for Thursday)
Tossed Salad with Blue Cheese Dressing (bagged salad greens, bottled salad dressing)
Ginger Shortcakes with Caramelized Pears (baking mix, canned pears)

Wednesday:
Pesto Chicken (boneless and skinless chicken breasts, jarred pesto or jarred pasta sauce if your family does not like pesto)
Linguini (boxed pasta)
Caprese Salad (jarred Italian dressing)
Peach Crisp (canned peaches)

Thursday:
Roast Beef & Brie Panini (beef from Tuesday)
Bread and Condiments (prepared horseradish sauce and Dijon-style mustard)
Tex-Mex Salad (canned black beans, corn, tomatoes, pimento, and ripe olives)
Tapioca Apples over Ice Cream (purchased ice cream)

Friday:
Fresh Tomato and Cheese Tart (vegetarian; puff pastry)
Zucchini Boats (extra zucchini from Sunday, shredded cheddar cheese)
Pineapple Salad (canned pineapple and orange segments, bagged spinach)
Embellished Chocolate Cookies

Saturday (4th of July):
Southern Fried Fish
Hush Puppies (frozen hush puppies)
Cheese Grits (quick cooking grits)
Corn on the Cob
Cole Slaw (bagged slaw mix, jarred slaw dressing)
Layered Tomato / Cucumber / Onion Salad (jarred Italian salad dressing)
Strawberry Shortcake (purchased sponge cake shells, canned whipped cream)
