MMC - 30 Minute Menus for September 21

How is your Fall going? This week's menus celebrate this glorious season with heartier menus that include the delicious joys of Fall with apples, cherries, and lots of grilling.

I have included two vegetarian menus this week to help with the budget and our health. If you prefer, meat can be added to both the minestrone soup (Italian sausage) and grilled pizza (whatever toppings you prefer).

You will find that I use several cooking methods, mix and match, to get dinner on the table quickly! (The ingredients in parenthesis show some of my quick-prep steps.) You can always substitute your favorite made-from-scratch recipes when you have more time.

Sunday:
London Broil (save some beef for Tuesday)
Corn, Tomato, and Blue Cheese Salad (canned corn, crumbled blue cheese; save some blue cheese for Tuesday)
Baked Potatoes (microwaved and baked to finish)
Single Layer Chocolate Cake (boxed cake mix)


Monday:
Quick Minestrone Soup (vegetarian; dried tortellini, canned tomatoes, mixed veggies, and white beans)
Green Salad (bagged salad mix)
Crusty Bread (purchased bread)
Cherry Cobbler (puff pastry, canned cherry pie filling)

Tuesday:
Blue Cheese Encrusted Beef Stew (prepared pie crust, beef from Sunday, beef gravy, canned potatoes and carrots)
Fresh Fruit Salad (prepared mayo)
Apple Dumplings a la Mode (purchased ice cream, prepared pie crust; purchase extra apples for Thursday and Friday)

Wednesday:
Spicy Redfish with Pineapple Slaw (bagged slaw mix, jarred slaw dressing, canned pineapple)
Herb and Mushroom Rice (boxed rice mix)
Chocolate Dipped Cookies and Berries (purchased cookies, chocolate morsels)

Thursday:
Chicken Ragout with Penne Pasta (boneless, skinless chicken breasts, boxed pasta, canned tomatoes and tomato sauce, grated Parmesan cheese)
Spinach and Pine Nut Salad (bagged baby spinach, cherry tomatoes)
Southern Fried Apples and Cream (purchased whipped cream; save some whipped cream for Friday)

Friday:
Kielbasa and Bean Cassoulet (fully cooked kielbasa, canned garbanzo beans)
Apple Feta Salad
Pumpernickel Bread (purchased bread)
Chocolate Puddings (instant chocolate pudding mix; whipped cream from Thursday)

Saturday:
Grilled Pizza (vegetarian; purchased pizza crust, jarred pasta sauce, shredded cheeses)
Lettuce Wedges (jarred salad dressing)
Grilled Pears with Honey Glaze
