MMC 30-Minute Menus for June 20, 2010

I hope you have grand plans to honor the Dad in the house! It is always nice to have a reason for celebration; the men in our lives certainly deserve to be celebrated. I have planned a wonderful London Broil with Fresh Tomato and Corn salsa for a nice 'manly' meal. To make this menu even better is that any leftover beef will be used on Tuesday for the Beef and Brie Panini. Enjoy being with your Fathers!

The Saturday menu with Pesto Chicken and Caprese Salad is company worthy but easy enough for a family menu. If you are having company for the weekend, this will make a very nice meal for your guests plus you will have time to enjoy your friends as well.

Sunday (Father's Day):
London Broil with Fresh Tomato/Corn Salsa (canned corn; save some beef for Tuesday, purchase extra fresh tomatoes for Saturday)
Baked Potatoes (microwaved then baked to finish)
Single Layer Chocolate Cake (cake mix)

Monday:
Double Bean Tortilla Stacks (vegetarian; purchased tortillas, jarred salsa, canned black beans and kidney beans, shredded cheese; purchase extra black beans for Tuesday)
Condiments and Veggies (jarred condiments, bagged shredded lettuce)
Spanish Rice (canned diced tomatoes; purchase extra canned tomatoes for Tuesday and Friday)
Chocolate Pear Tart (chocolate cookie pie crust, canned pears, jarred marmalade, bottled fudge topping)

Tuesday:
Beef & Brie Panini (beef from Sunday)
Bread and Condiments (prepared horseradish sauce and Dijon-style mustard)
Tex-Mex Salad (canned black beans, corn, tomatoes, pimento, and ripe olives)
Tapioca Apples over Ice Cream (purchased ice cream; purchase extra ice cream for Friday)

Wednesday:
Hot Chicken Salad (cooked or canned chicken, jarred chutney, canned pineapple, bagged salad greens)
Sliced Apples with Grapes
Chocolate Nut Toffee (boxed graham cracker crumbs, chocolate morsels)

Thursday:
Quick Baked Ziti (vegetarian; jarred pasta sauce, bagged shredded cheese)
Sauteed Spinach (bagged baby spinach)
Individual Cherry Pies (purchased pastry shells, canned cherry pie filling)

Friday:
Grilled Shrimp with Greek Veggie Salsa (cleaned and deveined shrimp, canned tomatoes)
New Potatoes
Corn on the Cob
Ice Cream with Apple Crunch Topper (purchased ice cream)

Saturday:
Pesto Chicken (boneless and skinless chicken breasts, jarred pesto or jarred pasta sauce if your family does not like pesto)
Linguini (boxed pasta)
Caprese Salad (jarred Italian dressing)
Peach Crisp (canned peaches)
