MMC 30-Minute Menus for July 11, 2010

It is really hot here in Atlanta - no question about where the term "HotLanta" originated! Because it is so hot, I have a delightful, cool, vegetarian Linguine Primavera for Sunday lunch so you won't swelter in your kitchen. There are also several grilled menus this week. Keep the heat outside for a cool dinner prep.

The Beef Stroganoff menu for Saturday is a quick prep meal that is mighty fine for company, too. Just add an appetizer course with a special beverage and you are all set to enjoy your company. I have some appetizer suggestions at 'Party in a Bag'! For instance, the 'At the Cheese Ball' will be great with: Cheddar Cheese Balls; Summer Sausage with Roasted Garlic Mustard; Sliced Pears,Veg Tray with Spicy Tomato Salsa; Savory Herb Crackers; and Honey Roasted Almonds.

Sunday:
Linguine Primavera(vegetarian; purchased linguine, grated Parmesan cheese)
Watermelon / Raspberry / Strawberry Salad (bottled raspberry vinaigrette)
Fresh Fruit Tarts (prepared pie crust, canned Mandarin orange sections and pineapple tidbits)

Monday:
Grilled Pork Chops
Hobo Potato Packets (canned potatoes and Mexi-corn)
Grilled Pineapple Salad (canned pineapple slices)
Banana Cream Pie (vanilla wafers, instant banana pudding mix, frozen whipped topping)

Tuesday:
Quick Seafood Bouillabaisse (cleaned and deveined shrimp, jarred picante sauce, and canned crab, clams, mixed vegetables, and tomatoes)
Rolls or Baguette of Choice
Cookie Ice Cream Sandwiches (purchased jumbo cookies and ice cream)

Wednesday:
Bistro Chicken (canned tomatoes, jarred salad dressing, shredded mozarella cheese)
Rice or Pasta (boxed rice or pasta)
Fresh Green Beans
Caramelized Fresh Peaches and Cream

Thursday:
Spicy Redfish with Pineapple Slaw (bagged slaw mix, jarred slaw dressing, canned pineapple)
Herb and Mushroom Rice (boxed rice mix)
Chocolate Dipped Cookies and Berries (purchased cookies, chocolate morsels)

Friday:
Hot Brats (fully cooked brats)
German Potato Salad (canned potatoes)
Cole Slaw (shredded slaw mix, jarred cole slaw dressing)
Peach Cobbler (canned peach pie filling, puff pastry)

Saturday:
Beef Stroganoff (dried onion soup mix, canned sliced mushrooms)
Rice
Broccoli
Caramel Apple Pies (purchased tart shells, caramel ice cream topping)
