MMC 30-Minute Menus for July 25, 2010

Are you having fun in the sun? You will with this week's menus! They will have you out of the kitchen in 30 minutes - guaranteed.

One of my favorite treats from summer produce is Fried Green Tomatoes. Saturday's menu offers a full bounty of summer offerings from the garden with tomatoes, cucumbers, and blueberries; fresh mango is a refreshing delight this time of year. You will find fresh, local produce scattered throughout this week's menus.

Sunday's menu of Eye of the Round Roast Beef with Peppercorn Sauce is always a family hit. The beauty of this dish is that it is prepared in the crock pot for an easy-breezy kitchen prep. This is a 'cook once / eat twice' dish so be sure to save some of the beef for Tuesday's Beef & Brie Panini!

Eye of the Round Roast Beef with Peppercorn Sauce (crock pot; gravy mix; save some beef for Tuesday)
Mashed Potatoes (frozen steamers)
Chop House Salad (jarred salad dressing)
Individual Boston Cream Tortes (purchased pound cake, instant pudding mix, prepared chocolate syrup)

Monday:
Fresh-from-the-Oven Fried Chicken (boneless, skinless chicken breast or tenders, seasoned coating mix for chicken)
Macaroni and Double Cheese (boxed macaroni and cheese dinner, shredded cheese)
Italian Green Beans (frozen mix)
Just Baked Cookies (take-and-bake cookies)

Tuesday:
Beef & Brie Panini (beef from Sunday)
Bread and Condiments (prepared horseradish sauce and Dijon-style mustard)
Tex-Mex Salad (canned black beans, corn, tomatoes, pimento, and ripe olives)
Tapioca Apples over Ice Cream (tapioca pearls, purchased ice cream)

Wednesday:
Tuscan Pasta (boxed pasta, canned cannellini beans, shredded cheeses)
Sliced Tomatoes
Italian Bread
Peachy Macaroon Cups (canned peaches, purchased macaroon cookies)

Thursday:
Polynesian Turkey Stir Fry (deli-cut turkey slices, canned pineapple, jarred orange marmalade)
Jasmine Rice
Snow Peas
Coconut Tarts (purchased tart shells, instant coconut pudding mix, canned whipped cream)

Friday:
Fish Italianio (bottled sun-dried tomato salad dressing, bagged baby spinach)
Fettuccine with Parmesan Topper (boxed pasta)
Fresh Seasonal Fruit
Baguette
Sugar Cookie Kisses (prepared cookie dough, purchased chocolate candy kisses)

Saturday:
Fried Green Tomato Sandwiches (vegetarian; bottled thousand island dressing)
Mango / Cuke Salsa (canned chilies)
Lemon Blueberry Tarts (prepared graham cracker tart shells, instant lemon pudding mix)
