MMC 30-Minute Menus for August 10

Do you have a vegetable garden? If so, then you know the simple pleasures of fresh vegetables picked ripe off the vine! If you don't have a garden, you must visit your local farmers market or produce stands because now is the time to enjoy wonderfully fresh produce. I do have a small garden and still like going to the farmers market - I always come home laden with fresh fruits and veggies that I don't grow in my garden.


I have a friend who has a pig butchered this time of year so she has plenty of bacon for her fresh tomato BLT's; talk about good planning! My husband and I love Eggplant Parmesan so much that we grow eggplant in our garden just for the dish. Do you grow vegetables just for a favorite dish, too?


My menus this week are simple to take advantage of the fresh fruits and vegetables now that they are at their peak. Ah, the sweet joys of summer!

Sunday:
Cheese Stuffed Chicken Rolls (Swiss and bleu cheeses wrapped inside flattened chicken breasts, rolled in bread crumbs, and baked)
Rice Pilaf
Green Beans
Nutty Fruit Salad
Pink Delights (creme de cacao and creme d' almond blended into softened ice cream and poured over fresh fruit)

Monday:
Beef Stroganoff
Wide Egg Noodles
Broccoli and Red Pepper Medley
Peaches and Cream (fresh peach slices with whipped cream)

Tuesday:
Linguine Primavera (fresh garden vegetables in a cream sauce with Parmesan cheese)
Tomato and Avocado Salad
Rum Cake with Fruit Compote (purchased angel food cake with dark rum/apricot jam/orange juice sauce and fresh fruit garnish)

Wednesday:
Grilled Pork Chops (marinated in Italian dressing prior to grilling)
Hobo Potatoes (diced potatoes, onions, and bell pepper wrapped in foil and grilled)
Corn on the Cob (probably grilled for a complete meal cooked outside!)
Gingered Pears (halved fresh pears grilled with gingered honey glaze)

Thursday:
Eggplant Parmesan
Pasta of Choice
Green Beans
Peach Turnovers (fresh peach slices rolled inside crescent rolls and baked, confectioners sugar glaze)

Friday:
Grilled Shrimp Skewers
New Potatoes
Beet Salad (slice fresh beets to cook quickly, then diced and placed over lettuce with orange sections, walnut vinaigrette, and chopped walnut garnish)
Ice Cream with Apple Crunch Topper (apple slices with butter and granola cereal sprinkled over top and baked)

Saturday:
Mixed Grill (hamburgers, hot dogs, chicken)
Buns and Condiments
Grilled Potato Wedges
Tomato and Corn Salsa (quartered cherry tomatoes make this a snap to prepare)
Grilled Fruit Kebobs with Yogurt Dip (lemon zest and juice added to lemon yogurt)
