MMC 30-Minutes Menus for August 3

I hope you are enjoying a wonderful summer! It is hot here in beautiful North Carolina - thank heavens we live close to the beach because I plan to spend some serious time there this weekend. You will notice that my heart is also at the beach this week with all the seafood and relaxed summer menus. I'm all for the cooks having a grand summer, too!

You will find that I use several cooking methods to speed dinner prep including prepared foods. When you have a bit more time, you can always substitute the prepared foods with your made-from-scratch recipes.

Sunday:
Grilled Pork Tenderloin
Buttered Penne Pasta
Summer Squash Medley
Waldorf Salad
Blueberry Cheesecake Pudding Pies (prepared graham cracker tart shells, cheesecake pudding mix)

Monday:
Thai Shrimp (I really love the Thai peanut / coconut milk sauce)
Angel Hair Pasta
Cuke and Honeydew Salad
Peach Cups (combine apricot preserves with whipped topping and spoon into sponge cake shells; broil peaches and place over apricot mixture; buy extra peaches for Saturday)

Tuesday:
Chicken Salad in Tomato Cups (rotisserie chicken, save some chicken for Friday)
Hot Rolls, Butter
Coconut Straws with Strawberries (lady fingers or white bread strips dipped in condensed milk, rolled in coconut /pecan mixture, and baked)

Wednesday:
Pork Medallions with Gravy (pork from Sunday)
Long Grain and Wild Rice (boxed rice)
Broccoli
Banana Splits (jarred ice cream toppings and maraschino cherries)

Thursday:
Broiled Flounder
Fettuccine with Green Peas
Blackened Fruit Salad (sprinkle balsamic vinegar over mixed fruit and broil until just blackened)
Black Forest Trifle (cubed angel food cake with cherry pie filling and whipped topping)

Friday:
Chicken Fingers (remaining rotisserie chicken from Tuesday, cut into strips, rolled in coating mix for chicken, and baked until crispy)
Mac and Cheese
Green Beans
Apple Streusel (apple pie filling baked with granola cereal sprinkled over top; this is very good a la mode!)

Saturday:
Fried Oysters over Spinach Salad (canned oysters rolled in flour / corn meal mixture and fried)
Hush Puppies, Butter (hush puppy mix or frozen and baked)
Peaches and Cream (reserved peaches from Monday)
