MMC - 30 Minute Menus October 5

Celebrate Fall! October brings so many great things: delightful weather, crisp fruits and veggies, colorful leaves, school festivals, sports, recitals, picnics, walking trips - all those things that make life wonderful (and quite busy).

The Saturday night supper is for a 'company is coming' evening. I will add appetizers of a wedge of brie and fresh grapes with assorted crackers plus fresh veggies with Ranch dip (pre-cut bagged veggies and bottled Ranch dressing with blue cheese crumbles and sliced scallion). You see, entertaining doesn't have to be labor-intensive just fun-intensive!

Sunday:
Chicken Cordon Blue (rotisserie chicken breast, save remaining chicken for Tuesday)
Long Grain and Wild Rice (boxed rice mix)
Sunshine Carrots
Mixed Greens with Pear, Goat Cheese, and Walnut Topper
Chocolate Cake (frozen layer cake)

Monday:
Spaghetti Bolognese (jarred pasta sauce, save leftovers for Friday)
Italian Vegetables (frozen steamer pkg)
Garlic Bread
Jam Thumbprint Cookies (purchased cookie dough)

Tuesday:
Hot Chicken Salad (chicken from Sunday, jarred chutney)
Sliced Apple Salad with Grapes (buy extra grapes for Friday dessert)
Chocolate Nut Toffee

Wednesday:
Salisbury Steaks on Bed of Onions (save leftovers for Friday)
Acorn Squash with Peas
Citrus Salad (jarred citrus, bagged lettuce)
Apple Tart (puff pastry)

Thursday:
Grilled Fish Packets (wrap fish and seasonings in foil)
Potato Stacks
Slaw Wedges (prepared slaw dressing)
Pound Cake with Grilled Pear Topper (purchased pound cake)

Friday:
Vegetable Beef Soup (soup base from Monday and Wednesday)
Hot Rolls
Dessert Grape Salad (grapes in a cream cheese and sour cream mixture)

Saturday:
Surf and Turf (grilled petite steaks and cleaned, deveined shrimp, skewers work well)
New Potatoes
Caesar Salad (bagged salad mix)
Chocolate Eclairs with Strawberries (lady finger cookies, bottled chocolate sauce)
