MMC 30-Minute Menus January 18

I have selected family favorites this week to help see us through the cold weather (I am truly a Southerner and prefer the warmer weather!) I know some folks just don't think it really gets cold in North Carolina - but I am not one of them!

If it is too cold where you live to use your outdoor grill, the Grilled Fish Packet dinner can be made inside just as easily.

I am going to my mother's house this weekend and will be preparing the Asian Pork Tenderloin with Peanut Sauce; it is easy to bake-and-take so that I will just do a little finishing when we are ready to eat. If we don't have any pork leftovers for Wednesday, I will use fresh boneless pork chops for the recipe. Either way, I am a winner because the recipes are quick and easy to prep and are quite delicious.

Almond Blueberry Cookies (prepared cookie dough, blueberry preserves)

Monday (Martin Luther King Holiday):
Bistro Chicken (jarred Italian dressing, canned tomatoes)
Linguini
Fresh Green Beans
Caramelized Peaches and Cream (purchased ice cream)

Tuesday:
Grilled Fish Packets
Potato Stacks
Slaw Wedges (jarred cole slaw dressing)
Pound Cake with Grilled Pears (purchased pound cake)

Wednesday:
Pork Medallions with Honey-Dijon Glaze (pork from Sunday)
Tomato and White Bean Salsa (canned tomatoes and white beans)
Steamed Brussels Sprouts
Apple Strudel (phyllo dough, canned apple pie filling)

Thursday:
Kung Pao Chicken
Fried Rice
Melon Salad with Apricot Dressing (prepared yogurt, apricot preserves)
Ginger Ice Cream with Fortune Cookies (purchased ice cream and fortune cookies)

Friday:
Quick Baked Ziti -Vegetarian (jarred pasta sauce)
Panned Spinach (bagged baby spinach)
Individual Cherry Streusel Pies (prepared pie shells, canned cherry pie filling)

Saturday:
Blackened Fish on Bed of Julienned Vegetables (bagged broccoli slaw mix)
Red Beans and Rice (boxed mix)
No-Bake Cheesecake Tarts (purchased graham cracker tart shells, instant cheesecake pudding mix)
