MMC 30-Minute Menus for February 28, 2010

This week brings in March. Will your March come in as a lion or lamb? I am hoping for the lion for a quick end to this brutal winter!

This week's menus bring in some fun for March with a few lighter meals planned. I hope you will enjoy some 'lighter' weather this week!

I'll bet the lasagna on Sunday comes as a surprise but you really can prepare the Lasagna Florentine in 30 minutes - the secret is the frozen pastry strips that do not require pre-cooking. If your family prefers meat sauce for lasagna, this recipe can easily change to accommodate your family's preference.

Sunday:
Lasagna Florentine (vegetarian; frozen pastry strips, frozen spinach, jarred pasta sauce, shredded cheeses; buy extra pasta sauce and cheese for Wednesday)
Hearty Greek Salad (bagged lettuce, jarred salad dressing and roasted red peppers)
Italian Bread
Chocolate Pies (prepared pastry shells, instant pudding mix)

Monday:
Beef Satay with Peanut Sauce (bottled Italian salad dressing, jarred peanut butter)
Rice Pilaf with Raisins (boxed rice mix)
Broccoli Spears (bagged and pre-cut broccoli)
Orange Gelatin Parfaits (purchased ice cream, boxed gelatin, canned Mandarin orange sections)

Tuesday:
Quick Weeknight Jambalaya (boxed gumbo mix, chicken tenders, fully cooked smoked sausage, cleaned and deveined shrimp, canned tomatoes)
Fruit Salad (bagged spring mix, jarred fruit)
Cream Puffs (purchased cream puffs)

Wednesday:
Ravioli Mediteranea (vegetarian; purchased ravioli, jarred pasta sauce, shredded cheese)
Fresh Green Beans
Heavenly Angel Food Cake (purchased angel food cake, strawberry jam, whipped topping)

Thursday:
Chicken a la King (pre-cooked or canned chicken)
Hot Biscuits (biscuit mix)
Strawberry Spinach Salad (bagged baby spinach, jarred salad dressing)
Apple Pie Parfaits ( canned apple pie filling, purchased ice cream)

Friday:
Pork Cutlets with Mushroom Sauce (sliced mushrooms)
Mashed Potatoes (frozen steamers)
Steamed Squash Medley
Banana Pudding Tarts (purchased graham cracker tart shells, instant banana pudding mix)

Saturday:
Mexi-Turkey Wraps (bagged shredded lettuce and cheese, deli-cut turkey slices or lunch meat)
Black Bean and Corn Salad (canned black beans and corn)
Corn Chips and Tomato Salsa (bagged corn chips, jarred tomato salsa)
Embellished Sugar Cookies (prepared sugar cookie dough)
