MMC 30-Minute Menus for April 4, 2010

Are you ready for Easter? We are having a family reunion at our local Stone Mountain Park so it will be a 'bake-and-take' feast for us!

The 'Spiral Ham' menu is perfect for a family picnic because all of the dishes can be made ahead of time. For the appetizer course, as we are gathering, I will serve the 'Easy Elegance' Party-in-a-Bag consisting of: a Brie Round with Mango Chutney; Smoked Salmon and Grapes, Endive, Snow Peas, Asparagus Spears with a Cucumber Dill Dip; Blue Cheese Sesame Seed Crackers and Simple Water Crackers; and Citrus Stuffed Gourmet Olives.

The menus this week celebrate the coming of Spring. After our hard winter, I am sure we are all ready for a taste of spring! These menus also help the pocketbook celebrate, I have selected a 'bake once / eat three times' weekly menu with the 'Spiral Ham' on Sunday followed by the 'Ham and Cheddar Bake' on Tuesday and 'Kentucky Hot Browns' on Thursday.

Sunday: Easter Sunday
Spiral Sliced Ham (fully cooked ham; save some ham for Tuesday and Thursday)
Quattro Fromage (boxed pasta, shredded cheeses)
Peas with Mushrooms (frozen veggie mix)
Lemon Pound Cake with Fresh Strawberries (purchased pound cake; save some strawberries for Wednesday)

Monday:
Grilled Salmon with Dill Butter
Long Grain and Wild Rice (boxed rice)
Snow Peas
Lemon Affogato (purchased ice cream and lemoncello liqueur or lemon-flavored soft drink)

Tuesday:
Ham Cheddar Bake (ham from Sunday; canned potatoes and vegetables)
Pineapple Salad (canned pineapple)
Individual Cherry Pies a la Mode (purchased tart shells, canned cherry pie filling, purchased ice cream)

Wednesday:
Thai Shrimp (Thai peanut sauce mix, cleaned and deveined shrimp)
Angel Hair Pasta
Cuke and Honeydew Salad
Strawberry Shortcakes (strawberries from Sunday; purchased sponge cake shells)

Thursday:
Kentucky Hot Brown Sandwiches (ham from Sunday; turkey lunch meat, shredded cheddar cheese)
3-Bean Salad (jarred 3-bean salad)
Derby Pie Tarts (purchased tart shells, chocolate morsels, chopped pecans, canned whipped cream)

Friday:
Grilled Pizza (vegetarian; purchased pizza crust, jarred pasta sauce, shredded cheeses)
Lettuce Wedges (jarred salad dressing)
Grilled Pears with Honey Glaze

Saturday:
Bistro Chicken (canned tomatoes, jarred salad dressing, shredded mozarella cheese)
Rice or Pasta (boxed rice or pasta)
Fresh Green Beans
Caramelized Peaches and Cream
