MMC 30-Minute Menus for September 19, 2010

Happy Fall y'all! What does your Fall look like? Here in Atlanta we have football games, tail gating, picnics, BBQ's, festivals, and so much more. This is the season for all things outdoors. The menus this week will get you out of the kitchen and to the out-of-doors pronto.

The Saturday night menu, Dilly Tilapia Bundles, is easy enough for a family night yet fancy enough for guests with the puff pastry wrapped tilapia. If you are having company, I would recommend the At The Cheese Ball 'Party in a Bag' appetizer course consisting of: Cheddar Cheese Balls; Summer Sausage with Roasted Garlic Mustard; Sliced Pears, Veg Tray with Spicy Tomato Salsa; Tortilla Chips and Savory Herb Crackers; Honey Roasted Almonds .

You will find that I use several cooking methods, mix and match, to get dinner on the table quickly! (The ingredients in parenthesis show some of my quick-prep steps.) You can always substitute your favorite made-from-scratch recipes when you have more time.

Sunday:
Bacon Wrapped Chicken (garlic & cheese spread such as Philly whipped creamed cheese, Rondele, or Alouette, boneless and skinless chicken breasts)
Roasted Potatoes (canned potatoes, dry onion soup mix)
Asparagus Salad with Citrus Dressing (prepared orange and lime juices)
Chocolate Raspberry Bars (prepared chocolate cookie dough, white chocolate morsels, raspberry jam)

Monday:
Jiffy Corn Bread and Chili Strata (purchased corn bread, canned chili, jarred salsa; purchase extra salsa for Thursday)
Citrus Salad (bagged greens, jarred citrus; either save some greens or purchase extra greens for Tuesday)
Double Chocolate Cupcakes (purchased cupcakes)

Tuesday:
Not-Your-Mother's Tuna Salad with Tomato Salsa (bagged mixed spring greens, canned tomatoes with peppers and onions)
Rolls
Lemon Phyllo Cups (phyllo cups, lemon pudding mix)

Wednesday:
Speedy Chicken Divan (deli or canned chicken, frozen broccoli and cheese mix)
Long-Grain White Rice
Fruit Salad (fresh, seasonal fruit)
Apple Pie a la Mode (purchased apple pie and ice cream; purchase extra ice cream for Saturday)

Thursday:
Double Bean Tortilla Stacks (vegetarian; purchased tortillas, jarred salsa, canned black beans and kidney beans, shredded cheese)
Condiments and Veggies (jarred condiments, bagged shredded lettuce)
Spanish Rice (canned diced tomatoes)
Chocolate Pear Tart (chocolate cookie pie crust, canned pears, jarred marmalade, bottled fudge topping)

Friday:
Kielbasa and Bean Cassoulet (fully cooked sausage)
Apple Feta Salad (purchase extra apples for Saturday)
Chocolate Puddings (instant chocolate pudding mix)

Saturday:
Dilly Tilapia Bundles (puff pastry)
Asian Stir-Fry (frozen stir-fry veggie mix)
Cranberry-Apple Salad
Tuilles with Ice Cream (purchased tortillas and ice cream)
