MMC 30-Minute Menus for September 26, 2010

Have things settled down for you and your family for the Fall season? We are getting into a nice pattern here. To help with the budget, I am planning a cook once / eat three times menu plan with a Turkey Breast on Monday followed by the Taco Ring on Thursday and Turkey Tetrazzini on Saturday. The Turkey Tetrazzini is fancy enough for company yet easy enough for family night.

The Sunday menu, Cheese Stuffed Jumbo Shells, is a special treat for my son's birthday; this is his favorite dish! If you are having company, I would recommend the Italian Buffet 'Party in a Bag' appetizer course consisting of: a Parmesan Wedge and Tuscan Olive Cheese Ball; Prosciutto with Figs, Apricots, Melon, Asparagus Spears and Artichoke Pesto; Red Pepper & Romano Bruschetta Topping with a Baguette; Asiago Cheese Crackers; Feta Stuffed Gourmet Olives. This will complement the meal nicely and leave you time to enjoy your guests, too!

Sunday:
Cheese Stuffed Jumbo Shells (vegetarian: jarred marinara sauce, shredded cheeses)
Mixed Greens and Pear Salad (bagged salad greens, canned pears)
Pineapple Upside Down Cupcakes (yellow cake mix, canned crushed pineapple; buy another yellow cake mix for Tuesday)

Monday:
Turkey Breast with French Country Gravy (crock pot; jarred Alfredo sauce; save some turkey for Thursday and Saturday)
Long Grain and Wild Rice (boxed rice mix)
Sauteed Brussels Sprouts
Pound Cake Torte (purchased pound cake, prepared frosting)

Tuesday:
Super Supper Stuffed Spuds (vegetarian; microwave potatoes and bake in oven to finish, shredded cheeses, bagged chopped veggies; purchase extra cheese for Thursday)
Mandarin Spinach Salad (bagged baby spinach, canned Mandarin oranges, bottled Asian-type salad dressing; purchase extra Mandarin oranges for Thursday)
Single Layer Yellow Cake with berries (yellow cake mix, frozen whipped topping, berries)

Wednesday:
French Style Sausage & White Bean Cassoulet (canned beans)
Greek Salad (jarred salad dressing)
Baguette
Chocolate Pudding (instant pudding mix)

Thursday:
Turkey Taco Ring Bake (turkey from Monday; refrigerated crescent rolls, shredded cheese, canned tomatoes)
Salsa and Sour Cream Toppings with Shredded Lettuce (jarred salsa, bagged shredded lettuce)
Refried Beans (canned beans)
Red Onion - Orange Salad (canned Mandarin orange sections)
Heavenly Hash (canned fruits, frozen whipped topping)

Friday:
Hot Brats (fully cooked brats)
German Potato Salad (canned potatoes)
Cole Slaw (shredded slaw mix, jarred cole slaw dressing)
Peach Cobbler (canned peach pie filling, puff pastry)

Saturday:
Turkey Tetrazzini Especialle (turkey from Monday; boxed pasta, sliced mushrooms, grated Parmesan cheese)
Broccoli Vegetable Medley (frozen blend)
Ice Cream with Pecan Shortbread Cookies (purchased ice cream and cookies)
