MMC 30-Minute Menus for November 28, 2010

I hope you had a grand Thanksgiving Day! Now it's time to enjoy the benefits of your hard work preparing your dinner by using the turkey from Thursday in the menus this week. My trick to using the turkey without complaints from my family is to create totally different meals with the turkey. This week those menus are Bistro Turkey, Cobb Salad, and Turkey Tetrazzini Especialle; each menu is so different that your family won't know that they are eating "Turkey again".

To help with the budget, I have also included a cook once - eat twice menu combo with the Herbed Leg of Lamb on Sunday and Irish Lamb Stew Saturday. Both are hearty menus for this time of year.

Sunday:
Herbed Leg of Lamb (crock pot; save some meat for Thursday, any leftover veggies can go in the lamb stew on Thursday, too!)
New Vegetable Medley (new potatoes, baby carrots, pearl onions, frozen tiny peas)
Mixed Citrus Salad (bagged greens, jarred fruit)
Chocolate Mousse

Monday:
Bistro Turkey (turkey from Thanksgiving Day, canned tomatoes, jarred salad dressing, shredded mozarella cheese)
Rice (boxed rice)
Fresh Green Beans
Caramelized Fresh Peaches and Cream

Tuesday:
Pork Cutletts with Mushroom Sauce (sliced mushrooms)
Pasta of Choice
Steamed Squash Medley
Strawberry Ice Cream Parfaits (purchased ice cream, jarred strawberry jam; buy extra ice cream for Saturday)

Wednesday:
Cobb Salad (turkey from Thanksgiving Day, bagged lettuce, pre-cooked bacon, bottled dressing)
Creamy Tomato Soup (boxed cream of tomato soup, purchased gold fish crackers)
Rolls of Choice (purchased rolls)
Apple Skillet Cake (canned apple pie filling)

Thursday:
Lamb Stew (lamb from Sunday)
Peach Mango Salad
Irish Soda Bread (purchased bread)
Crispy Caramel Marshmallow Balls (mini-marshmallows, jarred caramel ice cream topping, rice cereal)

Friday:
Double Bean Tortilla Stacks (vegetarian; purchased tortillas, jarred salsa, canned black beans and kidney beans, shredded cheese)
Condiments and Veggies (jarred condiments, bagged shredded lettuce)
Spanish Rice (canned diced tomatoes)
Chocolate Pear Tart (chocolate cookie pie crust, canned pears, jarred marmalade, bottled fudge topping)

Saturday:
Turkey Tetrazzini Especialle (turkey from Thanksgiving Day; boxed pasta, sliced mushrooms, grated Parmesan cheese)
Broccoli Vegetable Medley (frozen blend)
Ice Cream with Pecan Shortbread Cookies (purchased ice cream and cookies)
